Homemade mexican salad, like unto Cafe Rio or Costa Vida, PT. II

Alright, a lot of things didn't go as planned, which I'm sure has never happened to any of you ;) So here are  my notes on what went well and what could've been better. First of all, it ended up more like tacos/burritos, because I didn't have enough lettuce to make salads for everybody. But we did feed 6 people, including one man and one teenage boy! With only like 2 lb. of meat! With leftovers! Second, as much as I still love that  pork recipe , it has a pretty bold flavor on its own. It did taste pretty good in the burritos, but I think they would have been better with a more back-seat flavor of meat. Maybe I could try the same recipe, but without the vinegar? That would probably give it a more sweet, subtle flavor that would do better at blending with the other toppings. On the subject of the  Pico de Gallo . I had one large tomato and one medium onion in it, and I really wish I'd added another large tomato. It was too onion-heavy even for me, and I love onions!

I'll first start by saying that I know this is probably a far cry from authentic mexican food, (I have VERY little experience with legit Mexican food, sadly.) but it's yummy, and that's what I really care about. ;) Sweet Balsamic Glazed Pork from Mel's Kitchen Cafe Like I said, not real authentic, I know Balsamic vinegar is not a Mexican thing, it's Italian, but this is my favorite shredded pork recipe, so I decided to give it a go. Adjustments I made to the recipe: I doubled the glaze recipe, but not the amount of meat, and I added 2 extra cloves of garlic to the marinade. I threw the pork back in the slow cooker, after the prescribed 6 hours of cooking followed by shredding the pork, with a little bit of the glaze added to the water, to get it a bit more tender. Pico de Gallo This was the first recipe that popped up when I Googled "Pico de Gallo recipe". If you have a different pico or salsa recipe that you love, use that instead! I stray even

For the sake of blogging

Not a lot to report today, but I'm on here and it's been...5 moths since my last post! D: Right now I'm putting together a portfolio of my floral work, to display at a silent auction tonight. The proceeds go to charity, so I signed up to sell a custom floral arrangement, but now I need to prove that it would be worth their money to bid on it! I'm also hoping to get my name out there a bit more, so that I have more oppritunities to work! I haven't made any profit on any of the things I've done so far, they've all been at-cost for friends and family. That's not a bad thing, and I don't ever expect to make a living off it, but maybe someday it'll make a good side-job to make a little spending money :) Of course, any money I make is likely to go straight to my adorable little girl, (gettiing her clothes and toys and such) but that's ok! Yum, cake!

Holy cow, I did it again! I keep falling off the bandwagon with this whole blogging thing. But I'm here to make up for it with a couple of tasty recipes! These recipes were used for the gender reveal party for my first baby! Yes, it's been so long since I've written that I went through an entire pregnancy and now have a 2-month-old baby girl! Ramble and Rant

So I just read this article , and it stirred some strong emotions in me. I am super not a fan of this Abercrombie & Fitch quote, I mean, how shallow can you get? I was also an unattractive, overweight kid in my earlier years, and I'm beginning to be grateful for that. I feel that that time I spent knowing I wasn't supermodel material, or anything remotely close to it, helped me to develop a REAL personality. A song by Hot Chelle Rae that plays at my store says "She knows she's hot, but that's all she's got," and I think that hits the nail on the head. I'm not saying that no one who is naturally gifted in physical appearance can be a good person, I know some very sweet and intelligent attractive ladies, but I think it's very hard. Naturally good-looking people generally don't have to work as hard to make friends, 'cause all the not-so-attractive people are clamoring to be near them, to bask in their glory - and that is so WRONG! Tales of a wanna-be florist

So here are the promised pictures of my floral escapades! Hooray! First up is Krista, my high school buddy who's getting married this Friday! Woot woot! Her pictures are adorable too! :D Krista's flowers were all silk, and it was SUPER nice being able to do all the work in advance, no rush. The wires in the silk flowers were a super pain to cut through, except when I used my BFF's 'tin snips' as she called them. This was the first bridal bouquet I ever attempted, so go easy on me, eh? ;) The main body of the bouquet was pretty easy, it all just came together real nice, but adding the cascade to it was a MAJOR pain! >:( It just wouldn't cooperate!! I had to take the whole thing apart 2 or 3 times and start over, which was kinda frustrating. But it turned out lovely, and I am satisfied :) Top part - done in just over an hour. Hey all, it's been a while!

So...ya. Long time no...write? Things have been a little crazy since the wedding! Update time! So my 20th birthday is today, and tomorrow will be the 9 month anniversary of said wedding. MAN how the time flies! :D Our wedding was so perfect, it's hard to wrap my brain around! Everything was amazing!
